As fomo shooted to extraterrestrial heights, facing my soon-to-be departure from Pollenzo, my friend Alessio and I decided to initiate an event that people would not soon forget.
What did we do? We bought a whole lamb, buried it underground, and let it cook there. Quick instructions:
1. Buy whole lamb, try not to pay 20€/kg like we did (it was a very good lamb, though)
2. Dig a whole. Lay stones inside the hole. Start a fire on top of the stones. But stones on top of the fire. Let burn.
3. Wrap lamb in aluminium foil or very thick cotton. Put soil on top of the top-layer of stones. Put lamb inside. Put so much soil that you can't see smoke escape.
3a. We added a bunch of herbs from the garden (thyme, sage, rosemary) between first layer of soil and lamb. That was a good idea, butvery smokey.
4. Wait 5 hours. Dig lamb out of the soil. Eat with friends.
